A well-established restaurant group in the UAE is hiring an experienced Sushi Chef to join its Japanese kitchen team. Role Overview

As Sushi Chef, you’ll be responsible for preparing a wide range of sushi and Japanese dishes to a consistently high standard, from nigiri and maki to sashimi and specialty rolls. You’ll work closely with the Head Chef to maintain quality, freshness, and presentation across the menu, while keeping your station organized and efficient during busy service periods. This role suits a chef who takes real pride in technique and craftsmanship, and who is comfortable working at speed without cutting corners on quality.

Key Responsibilities

• Prepare sushi, sashimi, and Japanese dishes to recipe and presentation standards
• Handle and portion raw fish and seafood safely, following strict hygiene protocols
• Maintain consistent knife skills, plating, and portion control across all dishes
• Manage stock levels and freshness of fish and other perishable ingredients
• Coordinate with the kitchen team to ensure smooth, timely service
• Follow HACCP, food safety, and cleanliness standards at all times
• Support training of junior sushi chefs or kitchen assistants where required
• Keep the sushi station clean, organized, and fully stocked throughout service

What We’re Looking For

• Minimum 2–3 years’ experience as a Sushi Chef in a restaurant or hotel setting
• Strong knife skills and solid knowledge of Japanese cuisine and techniques
• Excellent understanding of food safety, especially raw fish handling
• Ability to work efficiently and accurately under pressure during peak service
• Team player attitude with willingness to take direction from senior chefs
• Willingness to work restaurant hours, including evenings, weekends, and public holidays
• Valid UAE work eligibility or transferable visa status
