Role Overview
As a Commis 1, you will work under the guidance of Chef de Partie and Sous Chefs to prepare and execute dishes to the resort’s exacting standards. You will take on greater responsibility than junior commis roles, supporting section setup, ingredient preparation, plating, and quality control during both daily service and high-volume events, while continuing to develop your technical skills across different sections of the kitchen.
Key Responsibilities
- Prepare and cook dishes according to standardized recipes and plating guidelines
- Support the Chef de Partie in daily mise en place and section setup
- Maintain consistent food quality, portion control, and presentation standards
- Assist with inventory checks, stock rotation, and minimizing food wastage
- Ensure full compliance with HACCP, food safety, and municipality hygiene standards
- Coordinate with other kitchen sections to ensure smooth, timely service during peak periods
- Support banqueting and special event menus as required by the culinary team
- Maintain a clean, organized, and safe working station at all times
- Continue developing culinary techniques under the mentorship of senior chefs
Requirements
- Minimum 1–2 years of culinary experience, ideally within a 5-star hotel or fine-dining establishment
- Culinary diploma or formal training is preferred
- Solid foundational cooking skills with a strong understanding of hygiene and food safety practices
- Ability to work efficiently under pressure in a fast-paced, high-standard kitchen
- Strong teamwork, discipline, and willingness to learn from senior chefs
- Flexible availability, including rotational shifts, weekends, and public holidays
- Basic English communication skills
