Position 1: Executive Chef

The Executive Chef sets the standard for everything that leaves the kitchen. You will run the whole culinary operation, from menu direction to team discipline, and you will be the person the owners rely on to keep quality steady night after night.

What you will do

  • Lead the kitchen team and manage daily operations
  • Develop and refine the Japanese menu, including seasonal specials
  • Control food cost, wastage, ordering and supplier relationships
  • Maintain strict hygiene and food safety standards, including HACCP
  • Train, schedule and mentor chefs and kitchen assistants

What we are looking for

  • Proven experience as a head or executive chef in Japanese cuisine
  • Strong leadership and the ability to stay calm under pressure
  • Solid knowledge of costing, inventory and kitchen planning
  • Previous UAE experience is a strong advantage

Position 2: Sushi Chef

The sushi counter is where guests watch you work, so precision matters as much as taste. As Sushi Chef you will prepare nigiri, sashimi, maki and signature rolls with clean technique and a steady hand.

What you will do

  • Prepare sushi and sashimi to a consistently high standard
  • Handle, fillet and portion fresh fish with proper knife skills
  • Cook and season sushi rice correctly through service
  • Keep the sushi station spotless, organised and fully stocked
  • Follow storage, temperature and cross-contamination rules for raw fish

What we are looking for

  • Hands-on experience as a sushi chef in a Japanese restaurant
  • Excellent knife skills and knowledge of fish varieties
  • A neat, presentation-focused approach and good guest manner at the counter
  • Ability to work evenings, weekends and busy peak periods

Position 3: Robata Chef

Robata is all about fire, timing and restraint. The Robata Chef runs the charcoal grill, bringing out the natural flavour of meat, seafood and vegetables with simple seasoning and careful heat control.

What you will do

  • Operate and manage the robata charcoal grill during service
  • Prepare, skewer and marinate ingredients ahead of service
  • Control heat and cooking times for consistent results
  • Coordinate with the sushi and hot kitchen teams to keep tickets moving
  • Maintain grill equipment and a clean, safe station

What we are looking for

  • Experience on a robata or yakitori grill, or similar Japanese grill cooking
  • Good understanding of Japanese marinades, sauces and seasoning
  • Comfort working in a hot, fast-paced environment

What all candidates need

  • A genuine passion for Japanese food and its traditions
  • Reliable attendance, a strong work ethic and respect for teammates
  • Basic English communication for working with a mixed kitchen team
  • A valid food handler certificate, or willingness to obtain one
