The hotel’s kitchen brigade is looking for a skilled Commis 1 to join the India Kitchen team, supporting the preparation of authentic Indian cuisine to the high standards guests expect from a Marriott-managed property.

As a Commis 1, you’ll take on more responsibility than an entry-level kitchen assistant, working closely with Demi Chefs de Partie and the Chef de Partie to prepare, cook, and plate authentic Indian dishes — from tandoor items and curries to breads and regional specialties — for hotel outlets, banquets, and in-room dining. This is a strong opportunity for a cook with a genuine grounding in Indian culinary techniques who wants to grow within a large, well-structured hotel kitchen.
Key Responsibilities
- Prepare and cook Indian dishes according to standardized recipes, ensuring consistency in flavor, texture, and presentation.
- Assist the Chef de Partie and Demi Chef de Partie with mise en place, marination, and daily prep for the India Kitchen section.
- Operate tandoor ovens and other specialized Indian cooking equipment safely and correctly.
- Support à la carte, buffet, banquet, and room service production as required by the outlet schedule.
- Maintain strict hygiene, food safety, and HACCP standards across all preparation and storage areas.
- Monitor stock levels of spices, proteins, and produce specific to the India Kitchen, informing seniors of shortages.
- Keep the section clean, organized, and compliant with Dubai Municipality food safety regulations at all times.
- Follow portion control and plating guidelines to manage food cost and presentation consistency.
- Assist with inventory counts, receiving deliveries, and proper storage/rotation of ingredients (FIFO).
- Support training and guidance of Commis 2 and Commis 3 staff within the section as needed.
Requirements
- Minimum 2 years of kitchen experience with a solid focus on Indian cuisine, ideally within a hotel or high-volume restaurant.
- Practical knowledge of regional Indian cooking techniques, spice blending, and tandoor cooking.
- Culinary diploma or formal training is an advantage but not mandatory with sufficient hands-on experience.
- Ability to work efficiently under pressure during high-volume service and large banquet events.
- Strong understanding of food hygiene and safety standards.
- Good teamwork and communication skills within a structured, multicultural kitchen brigade.
- Flexibility to work rotational shifts, including evenings, weekends, and public holidays.
- Candidates currently based in the UAE with relevant visa status will be prioritized for faster onboarding.
