Japanese kitchens are famous for discipline, precision and respect for ingredients. Put that inside a Dorchester Collection hotel and you get one of the best places in Dubai to build a serious kitchen career. The Lana is hiring a Cook and Kitchen Staff for its Japanese restaurant.
Already cooking professionally? This is a chance to move into a five-star environment. Starting out and ready to work hard? Kitchen support roles are where many great chefs begin, and a name like this on your CV opens doors later.
About The Lana
The Lana is the Dorchester Collection’s first hotel in the Middle East, located on Marasi Drive in Business Bay. It has 225 rooms and suites, a Dior Spa, a rooftop pool and around eight restaurants and bars, including Jara by Martín Berasategui and Riviera by Jean Imbert. It also holds a MICHELIN Key.
Expect high standards, organised teams and chefs who care about every plate that leaves the pass.
What each role usually involves
Cook
- Prepare and cook Japanese dishes following the chef’s recipes, portion sizes and plating standards
- Do your mise en place before service so everything is ready when the first order lands
- Use knives and equipment safely and with good technique
- Handle fresh produce, seafood and meat with proper storage and temperature control
- Keep your station clean, organised and consistent from the first plate to the last
- Communicate clearly with the chefs and the floor team during busy service
Kitchen Staff
- Support the cooks with basic prep such as washing, peeling, cutting and portioning
- Receive deliveries, check quality, then label and store everything correctly
- Keep floors, equipment, utensils and work areas clean and safe
- Follow hygiene and food safety rules at every step
- Help wherever the team needs you, because a good kitchen runs on teamwork
Who they’re likely looking for
For Cook:
- Previous kitchen experience, preferably in a hotel or quality restaurant
- Background in Japanese cuisine is a big advantage, though a strong general cooking foundation can still get your CV noticed
- Good knife skills and a calm, organised way of working under pressure
For Kitchen Staff:
- Experience is helpful but not always essential; a hard-working attitude counts for a lot
- Physically fit and comfortable on your feet through long shifts
- Willingness to learn and follow instructions carefully
For both:
- Basic food hygiene and safety knowledge
- Basic English to follow kitchen instructions
- Neat grooming and a positive team attitude
- Flexibility with shifts, weekends and public holidays
Salary and benefits
The original advert doesn’t state a salary, so I won’t invent one. Hotel jobs in Dubai often include staff meals, uniform, medical insurance, accommodation or an allowance, and training, but every employer is different. Ask about the full package at the interview so nothing surprises you later.
How to stand out when you apply
- Choose the one role that truly fits you, Cook or Kitchen Staff, instead of applying for both
- List the kitchens you’ve worked in and the stations you handled
- Mention any Japanese cuisine, sushi or hotel experience clearly at the top
- Keep your CV to one or two clean pages and have your documents ready
