Key Responsibilities
- Prepare and present sushi, sashimi, and other Japanese specialties in accordance with the restaurant’s standards and traditional techniques.
- Select and source the freshest seafood and ingredients daily, ensuring strict quality control at every stage.
- Maintain proper knife skills, rice preparation methods, and presentation aesthetics consistent with authentic Japanese culinary standards.
- Work closely with the Executive Chef and Sous Chef to develop seasonal menu items and daily specials.
- Ensure full compliance with HACCP food safety standards, UAE municipality health regulations, and hotel hygiene protocols.
- Monitor stock levels, minimize wastage, and assist with inventory and ordering of specialty Japanese ingredients.
- Train and mentor junior kitchen staff on sushi preparation techniques and food safety practices.
- Maintain a clean, organized, and efficient sushi station during high-volume service periods.
- Collaborate with front-of-house teams to accommodate guest dietary requirements and special requests.
Requirements
- Minimum 3-5 years of experience as a Sushi Chef, preferably within a five-star hotel or high-end Japanese restaurant.
- Formal culinary training or apprenticeship in Japanese cuisine is highly preferred.
- Strong knowledge of Japanese ingredients, knife techniques, and traditional preparation methods.
- Valid food safety certification (HACCP or equivalent).
- Ability to work efficiently under pressure during peak service hours.
- Strong teamwork, communication, and time-management skills.
- Previous UAE or GCC hospitality experience is an advantage.
- Flexibility to work rotational shifts, including evenings, weekends, and public holidays.
