Sushi done properly is a craft, and kitchens in Dubai are always on the lookout for people who can do it well. A restaurant in Al Barsha is now hiring a Sushi Cook, which could be a great move if you already know your way around a sushi counter, or if you’re a commis ready to take the next step.
Al Barsha is a lively part of the city, close to Mall of the Emirates and Sheikh Zayed Road, with plenty of residents and visitors around. A restaurant here usually stays busy, and that means a lot of orders, a lot of rolling and a lot of chances to get better, fast.

About the role
As a Sushi Cook you’ll work at the sushi station, preparing and presenting Japanese dishes to the restaurant’s standard. You’ll be part of a kitchen team, so timing and communication matter just as much as skill. A beautiful roll that arrives ten minutes late doesn’t help anyone.
Picture a busy Friday evening: tickets printing, rice ready, fish prepped and the whole counter moving in rhythm. You’ll be rolling, slicing and plating while keeping an eye on the next order. When service ends, you clean down, label everything properly and prepare for tomorrow. It’s fast, hands-on work, and it suits people who enjoy being in the middle of the action.
What you’ll be doing
- Prepare sushi rice with the right seasoning, texture and temperature
- Make nigiri, maki, uramaki and hand rolls, plus sashimi plates
- Slice and portion fish and seafood neatly, with consistent sizes every time
- Set up your station before service and keep it clean and organised throughout
- Plate every dish carefully so it looks as good as it tastes
- Follow food safety rules for raw fish, including correct storage, labelling and temperature checks
- Keep track of stock, tell your chef when items are running low and keep waste to a minimum
- Work smoothly with chefs and servers during busy hours
What you’ll need
- Previous experience as a sushi cook, sushi commis or in a Japanese kitchen
- Good knife skills and a steady hand
- Solid understanding of raw fish handling and kitchen hygiene, and a valid food safety certificate is a plus
- The ability to stay fast and neat when the orders pile up
- A positive attitude, a team-player mindset and a real willingness to learn
- Basic English to communicate with the team
- Flexibility with shifts, including evenings, weekends and holidays
- The right to work in the UAE
Why this could be a good career step
Sushi chefs and cooks with solid skills are in steady demand across Dubai, from neighbourhood spots to big-name Japanese restaurants. If you join a kitchen that lets you learn, you can grow from sushi cook to senior roles over time. Every week at the counter adds to your speed, your cuts and your confidence.
Tips to help your application stand out
- Be specific. Say exactly what you can prepare, such as nigiri, different maki styles and sashimi.
- Name the Japanese restaurants or kitchens you’ve worked in, and for how long.
- Add your food safety certificate to your CV if you have one.
- Expect a trial. Many kitchens ask for a short practical test, so show clean technique, not only speed.
- Practise even rice and clean cuts before your trial, because those two things get noticed first.
