About the role
We are looking for a skilled and passionate Sushi Chef to join our culinary team.
You will be responsible for preparing authentic Japanese sushi and sashimi
with precision, artistry, and consistency. This is an exciting opportunity

Key responsibilities
- Sushi preparation: Prepare and present a wide variety of sushi, sashimi, and maki rolls to the highest standards.
- Ingredient management: Select, portion, and store fresh fish and produce to ensure optimal quality and minimise waste.
- Kitchen hygiene: Maintain a spotless workstation and adhere strictly to food safety and HACCP standards.
- Menu development: Collaborate on seasonal specials and contribute creative ideas for new sushi offerings.
- Team coordination: Work alongside other kitchen staff to ensure smooth service during peak hours.
- Inventory control: Monitor stock levels, place orders, and manage ingredient rotation effectively.
What we are looking for
- Experience: Minimum 2 years of professional sushi preparation experience in a reputable restaurant.
- Knife skills: Excellent knife techniques and precision cutting for sashimi and nigiri.
- Knowledge: Deep understanding of fish selection, rice preparation, and sushi etiquette.
- Hygiene: Strong knowledge of food safety and sanitation procedures.
- Team player: Positive attitude, able to communicate clearly and support fellow team members.
- Flexibility: Willingness to work evenings, weekends, and public holidays as required.
